You could pity this absent-minded academic, who prepares himself a tasty tipple of sugared wine, but mixes in the contents of his inkpot instead. Alternatively, you could just enjoy seeing his pomposity punctured. The iron-based inks used in the Victorian era were heavily acidic, so no wonder he finds the taste bitter. It's a simple gag, which works on the big screen as the colour-change in the wineglass is unmistakable, and because of the actor's exaggerated performance, not to mention his outrageously clownish makeup and hair.
